When chef Travis Lett decided to open a bakery to expand the Gjelina brand, the group identified an old industrial building once used as a knitting factory just around the corner. The unreinforced masonry building features 2’ thick brick walls, heavy timber ceilings and columns, and original steel and glass windows. Custom casework sits atop reclaimed French oak millwork along the entry. The bar, which was built from 3” thick slabs of reclaimed marble from a Philadelphia Municipal building, offers indoor seating on custom-designed stools, to keep hungry patrons flowing through the space at all hours.
